Summary:
taking silky chicken (Taihe chicken) as the main research object, taking white-eared chicken, Roman laying hens, Shiqi miscellaneous chicken, Kangdal yellow chicken and Aiba Yijia as the control, the content of muscle inosinic acid was determined. The results showed that among the chicken breeds measured, the content of muscle inosinic acid in silky chicken was the highest, and the content of muscle inosinic acid was the lowest; with the increase of the weight of the breeds, the content of muscle inosinic acid had a downward trend; the weight of each breed of chicken had a negative correlation with muscle inosinic acid

Summary:
The content of inosinic acid (IMP) in several chicken muscles was determined by reversed-phase high performance liquid chromatography (1lp-HPLC). The results showed that the content of inosinic acid in the muscles of several breeds of Gushi chicken was higher than that of A- A chicken (commercial suit chicken), especially breast meat: the content (dry weight) of one-year-old Gushi hen was more than twice that of A- A chicken, the content of 130-day-old Gushi hen was about twice that of A- A chicken, and the content of 90-day-old Gushi cock was 50% higher than that; the inosinic acid content in the muscle of the Chinese court yellow chicken is also much higher than that of the A- A chicken.

inosinic acid (Inosine monophosphate,IMP) is an important flavor substance, which plays a great role in the freshness of muscle. at present, many countries in the world take the content of muscle sugan acid as one of the indicators of meat freshness.
